Ingredients:
- One 8 ounce package of thin spaghetti (I like whole wheat)
- 2 tablespoons vegetable oil
- One 10 ounce package of matchstick carrots
- 1/2 sweet onion diced
- 4 green onions, sliced
Sauce:
- 4 tablespoons teriyaki sauce
- 4 tablespoons honey
- 6 tablespoons low sodium soy sauce
- 1/2 teaspoon ground ginger
- Optional – 1/2 to 3/4 pound of cooked protein. It can be left over beef, pork, chicken or shrimp or a mix of this.
Instructions:
- Bring a large pot of salted water to boil/ Cook spaghetti until cooked through but firm to the bite. Drain and rinse with cold water.
- Wisk soy sauce, teriyaki sauce honey and ground ginger in a bowl. Set aside
- In a large skillet or wok, heat oil. Add sweet onions and carrots and 1/2 of the green onions until slightly tender (about 5-7 minutes)
Add spaghetti and sauce mixture. Toss until mixed and spaghetti is coated. Cook for another 5 minutes. - Toss in your protein if you want it. Cook for another minute.
- Serve in a big bowl or large clean pan. Garnish with the leftover green onions.

Special Notes:
During COVID when all restaurants were shut down. Both my husband and I were craving Lo Mein. So I figured I better learn how to make it. This was an easy recipe that I “edited” until I liked the taste. Now we don’t get take out as when compared, take is is very greasy. We like this better.
I like things spicy so I always add siracha sauce to my serving!
If you want to add more veggies or proteins, go ahead. The great thing about this recipe is it is all about what you enjoy. So, enjoy!
