Bill’s Healthy Salmon Bake

Servings: 2-3

Ingredients:

  • 2 lb Salmon Fillet
  • 2 ears Corn on the Cob (husk & silk removed)
  • 4-5 small Red Potatoes, washed
  • 1 small container Miso
  • Olive Oil
  • Smart Blend Margarine
  • 9×13 pan

Instructions:

  • Cut salmon into 2×4 inch chunks.
  • Coat bottom of a 9×13″ pan with olive oil.
  • Place salmon, skin side down in pan.
  • Lightly spread a layer of white miso on top of each piece of salmon.
  • Cut red potatoes & corn on the cob into 2 inch chunks & arrange in the pan with the salmon.
  • Add a dab of margarine on top of each piece of corn.
  • Bake for 30 minutes at 250 degrees.
