The Residence at North Ridge
Servings: 2-3
Ingredients:
- 2 lb Salmon Fillet
- 2 ears Corn on the Cob (husk & silk removed)
- 4-5 small Red Potatoes, washed
- 1 small container Miso
- Olive Oil
- Smart Blend Margarine
- 9×13 pan
Instructions:
- Cut salmon into 2×4 inch chunks.
- Coat bottom of a 9×13″ pan with olive oil.
- Place salmon, skin side down in pan.
- Lightly spread a layer of white miso on top of each piece of salmon.
- Cut red potatoes & corn on the cob into 2 inch chunks & arrange in the pan with the salmon.
- Add a dab of margarine on top of each piece of corn.
- Bake for 30 minutes at 250 degrees.
