Salmon Salad

Serves: 6

Ingredients

  • 2 cups elbow macaroni cooked and drained
  • 2 cups chopped broccoli steamed
  • 14 oz. can of salmon drained and broken into chunks
  • ½ cup of diced salary
  • ½ cup od cubed cheddar cheese
  • ½ cup of chopped green pepper
  • ½ cup of Mayo
  • ¼ cup sweet pickle chopped
  • 2 tb. Of honey
  • Salad greens washed and drained

Instructions:

  • In a large bowl combined macaroni, broccoli, salmon, celery, cheese, green pepper.
  • In small bowl blend mayo, pickles, honey – then carefully toss with mac mixture.
  • Line bowl with greens and spoon in salad

It is a light refreshing delight. A great summer meal.
Experiment with the amount of honey, cheese and sweet pickles to get the perfect taste. Great with Ritz crackers or toasted bread.

A recipe I came across 30 years ago and served to my wife when we were dating. She has been requesting it every summer since. Did she marry me for my cooking you might aks? Doesn’t matter I came out a winner. 😊
